Goats Cheese & Parma Ham Salad

Yum!

Summer is all about the salads, no comfort food here, everything is on show during the summer months. Unless you live in the UK and then the summer months are about two days in early June.

Even so, doesn’t mean your diet needs to suffer (pot, kettle, black Miss Stratford – that’s definitely pizza you’re having for dinner – again) 

In London this weekend, my friend whipped up this easy, healthy (ish) lunch and it was so yummy, I had it again today. It’s a simple light lunch that will keep any snack attacks and cravings at bay, though make a lot as it’s quite light.

You’ll need: 

Parma Ham

Goats Cheese

Mixed salad leaves – I had spinach, watercress and rocket

Tomatoes

Balsamic vinegar/dressing

Olive oil

Salt and pepper

It’s pretty simple, mix your leaves and tomatoes together in a bowl, slice the ham and crumble the goasts cheese over. Drizzle the oil and vinegar and add salt and pepper to taste.

The great thing about this salad is that it’s far from limited and you can just keep on adding until you feel it’s a decent meal. I personally love this simple combination though.
