So… Waitrose pulled a blinder this month, not only did their magazine – the magazine of which I am a number 1 of – have MEXICAN FOOD on the front cover and inside it and just well, everywhere – it also had recipes for popcorn. Now, everyone is a fan of popcorn and if you’re not then, I do not have room for that sort of negativity!
Honey and peanut butter are two of my favourite flavours. Honey on toast, peanut butter and apple, both used in baking. They are two staples of my cupboard and quite possible two of the most used things in my cupboard. Waitrose pulled a blinder because they put these two lovely flavours on popcorn.
Yep. I’m a fan.
Turn on the oven onto 150 degrees. Heat a tablespoon of oil in a large pan, ideally with a lid, large enough to allow the popcorn kernels room to move and pop. Once heated, place 50g of kernels in the pan, pop a lid over it and wait. Whilst the corn is exploding away, heat 50g of honey and 50g of peanut butter in a smaller pan until melted. Once the popping has slowed down to a stop, remove from the heat and pour over the melted nut and honey mixture. Stir to ensure all the corn is covered. Place the covered corn on a baking tray and bake in the oven for 6 minutes. Remove from the oven and cool for 10.
Once cooled, dive in and enjoy! it’s a very moorish snack and so easy to make! What’s your favourite flavour combination on popcorn?
